White Bean Veggie Pie

Is it just me, or does Christmas seem to more stressful and hustley-bustley for many people? Almost losing its importance.. Based on what I’ve seen or heard from others, I could almost assume so. This is what I find frustrating about this time of year. People place too much stress, worry, and effort over the wrong things. Buying the perfect gift, magazine worthy decorating, having the biggest tree, worrying about gaining 5 pounds from eating too many treats, spending more money than they really have.. And the list continues. Christmas is becoming TOO commercialized. I don’t even think many people who participate in all commotion actually know what Christmas is about!! This is a time of love, peace, joy, and happiness. A time to celebrate with family and friends, enjoy good food, and reflect on the true meaning. What is the true meaning you may ask? Jesus’ birth! A miraculous birth with an amazing story and journey behind it. It’s the time when the Lord’s son was delivered to the earth to later save us and give us the most amazing gift of all. Forgiveness and eternal life with him. Don’t forget what this beautiful celebration is all about. And enjoy this delicious delicious white bean and veggie pie!!!

Ingredients 

  • prepared gluten-free pie shell
  • 1 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 small onion, chopped
  • 1 celery stalk, chopped
  • 1 zucchini, chopped
  • 1 c spinach
  • 3 tbsp dried cranberries
  • 3/4 c walnuts
  • 2 tbsp lemon juice
  • 2 tsp tamari
  • 1 can white beans, rinsed
  • 1/4 c parsley, chopped
  • tbsp thyme, dried

Cranberry Topping (puree in food processor)

  • 1/2 c fresh cranberries
  • 1 tbsp agave nectar
  • 1 tsp lemon juice

  1. Preheat oven at 400F
  2. Heat olive oil in a pan over medium heat. Saute the garlic, onion, celery, and zucchini until soft
  3. In a food processor, add the white beans (except 1/4 c), walnuts, lemon juice, and tamari. Pulse to lightly to chop. Remove half of the chopped mixture from food processor and transfer to a large bowl
  4. Transfer sauteed veggies from the pan to the remaining mixture in the food processor. Puree until smooth
  5. Transfer pureed mixture to the bowl with white bean and walnut mixture. Add spinach, cranberries, parsley, thyme, and the 1/4 c remaining white beans. Stir to combine and transfer into the prepared pie shell.
  6. Brush the top of the pie shell with of a bit of olive oil and tamari.
  7. Place prepared pie shell on a baking dish
  8. Bake for approximately 35 minutes, or until a toothpick comes out clean
