Festive Chia Pudding

If this doesn’t scream Christmas, I don’t know what does! I made this for my family last Christmas morning and it was definitely enjoyed. It’s the perfect excuse to use up those cranberries that might be lying around. Cranberries have anti-inflammatory benefits, cardiovascular benefits, immune support, antioxidant protection, anti-cancer benefits, digestive tract  benefits, and protection against urinary tract infections. These are little powerhouses! Enjoy them as much as you can!

Yield: 2 servings


Ingredients 

  • 1 c frozen raspberries
  • 1/2 c fresh cranberries
  • 1 c almond milk
  • 3 tbsp hemp seeds
  • 2 tbsp agave or maple syrup
  • 1 tsp vanilla
  • 1/3 c chia seeds

  1. Using a blender or hand held immersion blender puree the raspberries, cranberries, almond milk, hemp seeds, agave, and vanilla
  2. Stir in the chia seeds
  3. Refrigerate overnight
  4. Top with nuts, fresh fruit, coconut…
