No Cook Spinach Dip

It’s the holiday season which means parties, celebrations, and get togethers! I made this spinach dip for my Christmas potluck with friends last weekend and it was a hit! It’s raw, which is awesome not only because it’s loaded with nutrients but also because it’s quick to whip together and does not require any heating or further preparation. Not to mention, the colour is perfect for Christmas! There’s lots of garlic in there too which is great for preventing the flu, also common at this time of year. Here are some other flu fighters: citrus fruit, tomatoes, red pepper, butternut squash, ginger, apples, and garlic.

Yield: 1.5 cups

Ingredients:

  • 1/2 c cashews, soaked for at least 2 hours
  • 2 tsp nutritional yeast
  • 2 tsp lemon juice
  • 2 cloves of garlic
  • 1/4 tsp pink sea salt
  • 1 c spinach
  • 1/3 c leek, chopped
  • 1/4 c olive oil
  • 3 tbsp water
  • 2 tbsp dijon mustard
  • dash of pepper

  1. In a food processor combine cashews, nutritional yeast, lemon juice, garlic, and pink sea salt. Pulse until cashews are pureed. Scrape the sides of bowl
  2. Add the spinach, leek, olive oil, water, dijon mustard, and pepper to the food processor. Continue to pulse with the cashew mixture until it becomes smooth. You will probably need to stop and scape the sides a few times
  3. Store in an air tight container in the fridge until ready to serve
  4. Serve with veggies, crackers, or pita!
