Carrot Cake Breakfast Bars

It’s the season of root vegetables, therefore I’m trying to find as many different uses for them as possible! That’s the sad thing I find about fall and winter.. I feel like my leafy and dark green veggie intake decreases (or becomes more of an effort) and the orange veggies become more prominent. Not that its necessarily a bad thing.. I try to embrace whatever I get while still ensuring I get enough variety! These carrot cake bars are perfect for those who always seem to be running out the door in the morning with or without breakfast in hand. You’ve got some fruit, veggies, protein, omegas, and fibre all in a tasty bar-to-go! I think kids would find these a hit too!


*Tip: Skip the walnuts and icing for a school treat!

Yield: 12 bars


Ingredients 

  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)
  • 1 c grated carrot
  • 1 1/4 c brown rice flour
  • 1/2 c gluten-free oats
  • 1/4 c organic cane sugar (or coconut sugar)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tbsp hemp hearts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 3/4 c unsweetened applesauce
  • 1/2 c water
  • 1/4 c raisins
  • 1/4 c sunflower seeds
  • 1/4 c walnuts, chopped

Icing 

  • 1/3 c pecans, soaked for at least 2 hours
  • 1 tsp vanilla
  • 2 tbsp maple syrup (or agave)
  • 2 tbsp coconut oil, melted

  1. Preheat oven at 350
  2. Line a square baking pan with parchment paper
  3. In a small bowl, make flax egg and sit aside
  4. In a large bowl, combine dry ingredients; flour, oats, baking soda, baking powder, hemp hearts, cinnamon, nutmeg, and ginger
  5. In a separate bowl, combine the wet ingredients; applesauce, water, and flax egg
  6. Add the wet ingredients to the dry ingredients. Mix well
  7. Stir in the grated carrots, raisins, sunflower seeds, and walnuts
  8. Transfer the batter to the baking pan
  9. Bake for approximately 27 minutes, or until a tooth pick comes out clean
  10. For the icing: combine all ingredients in a food processor until smooth. You will probably need to stop and scrape the sides a few times

  1. I made these tasty bars & loved that special icing a lot too!
    They were very delicious too. My hubby & I took each 2 of them to our garden allotment! It gave us a lot of energy! Fantastic even! 😊
