Easy Lentil Burritos

Looking for a new lunch or dinner idea? I have the quickest, easiest, tastiest, and no cooking required recipe for you! I whipped up this recipe on a “study break”, and as you can probably imagine my brain wasn’t all there by that point. 😉 That’s how easy it is! Lentils are awesome because they absorb whatever spices or seasonings you’re using so they taste great! They’re also a good source of protein, fibre, folate, many minerals, and B-vitamins which us vegans always welcome. These burritos are a good lunch option for work or school and since they’re protein and fibre loaded they will definitely keep you full all afternoon.



Filling Ingredients 

  • 1 can of lentils, drained and rinsed
  • 1/3 c walnuts
  • 4 mushrooms
  • 2 tbsp tamari
  • 1 tbsp sun dried tomatoes
  • 2 tsp + 1/4 tsp chili powder
  • 1 tsp + 1/4 tsp cumin
  • 1/2 tsp paprika


Avocado Sour Cream Ingredients

  • 1/4 c cashews, soaked for at least 2 hours
  • 1/2 avocado
  • 1/4 c + 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp rice vinegar
  • 3 cloves of garlic


  1. Combine half of the lentils and the remaining filling ingredients into a food processor. Puree until ingredients are well mixed but still a little chunky. You may need to stop and scrape the sides a few times
  2. Transfer the pureed mixture into a bowl and stir in the remaining lentils
  3. For the avocado sour cream, combine all ingredients in a food processor until smooth
