Apple-Pear Crisp

Have you ever checked out the reduced produce section of your local grocery store?? It’s amazing what fruit and veggies you’ll find! Produce in great condition and for super cheap, you can’t go wrong! Especially if you’re planning on baking or cooking with fruits and veggies, why would you spend more money for something without a little bruise, or less ripe..? They’re getting chopped up, pureed, sauteed, steamed anyway! I was at Longos and saw these beautiful pears calling my name, 6 of them for $1.00! As the weather is starting to get chilly, I thought a pear crisp was sounding pretty delicious. Check out my simple recipe ๐Ÿ™‚

  • 3 pears, diced
  • 1 apple, diced
  • 1/2 c dates, diced
  • 1/4 c walnuts
  • 2 tbsp flaked coconut
  • 1 c quinoa flakes (gf oats work too)
  • 1/3 c coconut oil, melted
  • 1/4 c maple syrup (agave would work too)
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves

  1. Preheat oven at 350
  2. Line a square baking pan with parchment paper
  3. Arrange the chopped pear and apple in the baking pan. Sprinkle the dates, walnuts, and coconut on top.
  4. In a mixing bowl combine the quinoa flakes, coconut oil, maple syrup, vanilla, lemon juice, and spices
  5. Using a wooden spoon, evenly top the apples and pears with the quinoa flake mixture
  6. Bake for 35 minutes, or until the top is golden and crisp
  7. Top with coconut cream
