Pumpkin Chocolate Chip Pancakes

If I could eat pancakes for breakfast, lunch, and dinner I would! I remember when I was living away for university my roommate and I could not wait until Sunday morning when we actually had time to make a breakfast we could sit and enjoy! Pancakes of course. There’s something about those warm and tasty flap jacks that I can’t get enough of.. Maybe it’s the maple syrup they’re loaded with 😉 I’ve made these pancakes every week since coming up with the recipe and they taste just as amazing every time! Today I was lucky enough to have breakfast and share my pancakes with a wonderful friend. It’s so amazing when you connect with like-minded people who share the same energy and positivity. It’s easy to feel like an outsider when you hold different values and beliefs from much of society..But you’re never alone! There are other people out there who feel the same way you do, and it’s very interesting to see how your paths will cross. Because they will!



  • 1 c almond milk
  • 2 tbsp flax meal
  • 1 tsp apple cider vinegar
  • 1 1/4 c brown rice flour
  • 1/4 c coconut sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/4 tsp ginger
  • 1/3 c pumpkin puree
  • 1/4 c coconut oil, melted
  • 4 tbsp water
  • 1 tsp vanilla
  • 1/4 c chocolate chips


  1. In a small bowl combine almond milk, flax meal, and apple cider vinegar. Sit aside
  2. In a large bowl mix all of the dry ingredients- flour, sugar, baking powder, and spices
  3. In a third bowl combine the pumpkin, coconut oil, water, and vanilla
  4. Add the almond milk mixture and pumpkin mixture to the dry ingredients. Mix together well
  5. Stir in the chocolate chips
  6. Let the batter sit for 5 minutes before making your pancakes
